FROM CASTELLI
ASIAGO
Asiago d'allevo has a marked taste and is straw coloured with a dense
grainy consistency.
DOLCEITALIA
Made from pasteurised cow's milk, this blue veined cheese has a
slightly milder flavour than traditional blue cheeses. It's also
suitable for vegetarians.
FONTINA
A fairly soft cheese with irregular holes. It melts in the mouth and
is a light straw colour. It has a characteristic mild delicate flavour.
GORGONZOLA
This is the King of Italian cheeses. The blue/green veining gives it
a full flavour.
GRANA PADANO
A hard, cow's milk cheese, matured for about 18 months with quite a
sweet flavour.
MASCARPONE
An extremely creamy cow's milk cheese in a tub with a great tangy flavour.
Can be used as a substitute for cream. One of the main ingredients in
Tiramisu.
MOZZARELLA
The famously 'stringy' cow's milk cheese ideal for melting.
MOZZARELLA DI BUFALA
Preserved in brine, this version, made from Buffalo milk, has much more
character and a fuller flavour than the cow's milk Mozzarella.
PARMIGIANO REGGIANO
The original Parmesan. It has a hard texture and sweet, nutty flavour.
Ideal for grating or shaving for use in many recipes.
PECORINO ROMANO
This Italian cheese is made from 100% ewe's milk. It has a strong characteristic
flavour and aroma.
PROVOLONE
Cow's milk semi-hard cheese with a delicate flavour. The whole cheese
is usually a 'sausage' shape bound by string.
RICOTTA
Very fresh cow's milk cheese in tubs made from the whey which means
it is very low in fat compared to others.
TALEGGIO
Deliciously creamy cheese with a tangy flavour. Its orange rind develops
a natural mould as it matures which is a characteristic of the cheese.
VEGETALIA
This cheese has similar characteristics to true parmesan and is suitable
for vegetarians. Ideal for grating or shaving.
